This food is full of color and flavor. Rice noodles in the meals are not as dominant as hoi sin sauce. This sauce gives the whole meal strong taste if you add a little more flavor overcharges the others in a tortilla.

This recipe is suitable for dinner is quite rich :)
Serves 1
total time 10 minutes
20g fine rice noodles
1 large tortilla
gem lettuce
carrot
5cm piece of cucumber
50-80g leftover cooked chicken
1 spring onion
optional: fresh red chilli
heaped tablespoon hoi sin sauce
lime
Snap the noodles into a small bowl, cover with boiling water and leave to rehydrate for 5 minutes, or until softened, then drain and refresh under cold water, draining again. Whether using a fresh or frozen tortilla, simply pop it into a mcrowave for 30 seconds, or in a dry frying pan on the hob, merely to heat it through and make it flexible ( you dont want it crispy). Lay it flat on a clean work surface, place the lettuce leaves across the middle in a line and arrange the noodles on top.
Cut or scrape the watery core out of the cucumber, then coarsely grate it with the carrot on a box grater or cut them into matchsticks using good knife skills. Layer on top of the noodles, then shred or slice and add the chicken. Trim, finely slice and scatter over the spring onion and chilli ( if using). Drizzle over the hoi sin sauce, add a good squeeze of lime juice, then fold in the sides and roll up the wrap. Cut it in half and eat straight away, or wrap it in tin foil and pop it into the fridge for later.
